Chocolate chip almond cookies WITHOUT butter or shortening!

OK so i made these yesterday and they were actually pretty good for not using butter or shortening........BUT we used vegetable oil, sounds weird but trust me! it was yummy. They were a hit, there is only about 4 of them left....lol

okay so here are the ingredients:

1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt


1/4 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup vegetable oil
1 large egg
1 teaspoon vanilla


1 cup of Chocolate chips or chunks of chocolate (milk or dark, which ever you prefer!)
1/2 cup of almonds

Set oven to preheat at 350 degrees

Stir together flour, baking soda and salt in a small bowl and set aside....

Then add the sugars, oil, egg and vanilla.... mix together.

Slowly stir in dry ingredients into wet mixture, after blended well together, mix in the chocolate and almonds.

Using a tablespoon measure or spoon, scoop up dough and shape into 1 inch rounds. Space them about 2 inches apart on ungreased cookie sheets. The mounds should be full with chips and almonds  ;] Bake for 8-10 minutes & let cool for 2 minutes on cookie sheet.
Makes about 2 dozen or less.


* Also if you want just chocolate chip cookies you can add 1&1/2 cups of chocolate chips and take out the almonds! :-] they are sooo yummy!

Wedding Blues.....;]

So our wedding will be coming up soon, and man oh man it sure is coming pretty darn fast! Were still planning, as for me and my fiance its hard to plan since were far from the wedding location. A little iffy about the reception and how everything will turn out but i know it will all be A-OK! ;] Still trying to come up with decoration ideas and how everything will be set up since we will be renting a huge tent for the reception area. Here are some photos of the location, and i must say the sunsets are Beautiful! nothing can compare!! .....
&& i sure do hope it looks like this when the reception is going on, it would be so lovely, don't ya think?
I'm thinking of paper lanterns type of vibe for the location and decorations. It would give it a nice vibe especially since there really is no scenery out here besides the beautiful mountains. As far as location, its in the middle of no where, my grandparents house, lol. But its away from traffic and all that distraction, so its a nice quiet getaway......and worth it i think.
and yes i took these photos about 2 summers ago, i love photography, it opens my imagination and man do i love taking pictures of anything and everything....:-)

Well just thought i would show my photography skills, I'm still trying to invest into a fancy camera, in the future here pretty soon!! :] And also thanks for reading my blog, you must be pretty bored LOL.....but as for wedding planning. any ideas that would go with this beautiful sunset? would be much appreciated ;] ..........well until next time, buh-bye & have a good evening!


Strawberry Shortcake with homemade filling and glaze..

Here goes another recipe, i made this for my mother in-laws birthday over the weekend! and it was sooo delicious and yummy! everyone loved it! :] it has about 10-12 servings depending on your serving size. Also another trick with the filling, you can mix it with anything pretty much, like....fruits, cake, cookies....ya know anything that would taste good with it. But here we go, its pretty easy to make!

Ingredients:

2 lbs of strawberries (cut into quarters)
2 large angel food cakes (buy the ones that are already made from the bakery)

16 oz tub of whip cream
8 oz cream cheese
14 oz can of sweetened condensed milk

1&1/4 cup of sugar
4 tbsp of cornstarch
6 tbsp of strawberry gelatin
1&1/2 cup water

1. Slice the angel food cakes into squares about 1&1/2 inch. Then separate equally into three portions, set aside.
2. For the Glaze, in a medium saucepan, combine the sugar, cornstarch, strawberry gelatin and water. Cook over medium heat, until it comes to a thick consistency, kind of like syrup.... then let it set aside and cool down. Then fold in the strawberries.
3. For the Filling combine the whip cream, cream cheese, sweetened condensed milk together, til all the lumps are gone and it becomes a thick creamy consistency.

To Layer: Place 1/3 of the cake in a large clear bowl, Top with a layer of glaze, followed by a layer of the filling mixture. Repeat the layering in this order for remaining cake, glaze and filling. And there ya go!! :] enjoy, its super easy and super delicious!! :]

Peanut butter cookie blossums with a Kiss ;]

Okay so this is my fiance's Favorite!! --- he made me make these twice in 1 week!! lol, was no biggie because they are sooo easy to make! and they are delicious too!

Ingrediants:
3/4 cup of sugar
1 cup of peanut butter
1 egg
1/4 cup of flour
Chocolate Hershey kisses-about 18-20 depending on how big you make your cookie.

Preheat your oven to 350 degrees......Mix together sugar, peanut butter and egg - then shape into 1&1/2 inch balls, place on a ungreased cookie sheet and there ya go!~ Bake for 10 minutes & take out of the oven and press a Hershey Kiss in the middle of the cookie.

*If you want it more sweet you can put in 1 cup of sugar, for me it was too sweet so i cut it down a bit. and also if you want a crunchy cookie you can use the crunchy peanut butter instead of the regular peanut butter.

Intro....

So here we go my first post ever as a blogger!!........i hope y'all enjoy my posts, it has everything to do with anything. I am a stay at home mom for now, and while being alone in the house with my daughter i tend to cook, bake, paint, do arts and crafts etc.....it makes my time go by faster and gives me something to do! everything i do is all homemade and handmade, hehe. A little about me, My name is Sherry and I am from the Navajo tribe, i am from Arizona, and no its not all desert!! lol I am from Northern Arizona a town called Flagstaff, which i call paradise! ;] we are surrounded by the beautiful San Francisco Peaks and beautiful smellin' pine trees! yes, its nothing near desert. I am a mother of my beautiful 5 month old daughter and soon to be wife in august to my best friend & man of my dreams. Well here we go....it might take awhile for me to post some stuff so bare with me, it will be worth the wait, i hope :)
